This delicious scramble is just like scrambled eggs with a twist! Not only is this delicious dish packed full of nutrients and vitamins it is packed full of flavor. As a child who grew up on a farm and ate a lot of scrambled eggs, I can assure you these taste so much better. You can enjoy your vegan breakfast scramble and know that no chickens were harmed in the making of this breakfast scramble!

Ingredients
Sunflower oil {or prefered oil}
Extra firm tofu
Baby belle mushrooms
Colorful bell peppers
Garlic cloves
Yellow onion
Nutritional yeast
Turmeric powder
Salt/Pepper
Optional
Sage
Thyme
Oregano
Smoked paprika
Fresh parsley
Preparation
Step 1
Begin by draining the tofu. Set aside on a towel to drain completely. While tofu drains, dice all vegetables to 1/4" square pieces.
Step 2
Turn a frying pan onto medium heat {cast iron is my personal favorite} and add oil. Once your pan is heated, add onions and saute until translucent.
Step 3
Add remaining vegetables and saute for 5-10 minutes. Then add tofu, crumbling the tofu with your hands as you add it.
Step 4
Add remaining ingredients and cook an additional 5 minutes on medium heat to let all the flavors infuse into the tofu.
