The roast of your dreams! Can you honestly believe you can make a roast from cauliflower? Well believe it and try it, I promise you won't regret it. This roast is so delicious, especially if you love curry flavors {which I do}. However the beauty of spices and creating spice mixes is that the possibilities are endless and you could take this so many ways.

Ingredients
Whole cauliflower
Curry powder
Smoked paprika
Mustard powder
Turmeric powder
Chile powder
Garam Masala powder
Salt/Pepper
Fresh cilantro
Raw almonds
Sunflower oil {or preferred oil}
Raisins
Preparation
Step 1
Boil a large pot of water and boil entire cauliflower whole with 1 tsp salt, placing the cauoiflower stem up into the pot of boiling water. Boil for 10-15 minutes.
Step 2
While the cauliflower is boiling, mix your dry spices together. Then add oil to spices and mix well. Set aside as you drain the cauliflower.
Step 3
After you have drained the cauliflower, cut the stem so your cauliflower sits flat when you place it on a pan. Then pour your spice mix over the whole cauliflower, using a spatula, try to spread the mix to cover the cauliflower entirely, if you want to use your hands this works too!
Step 4
Preheat your oven to 375 degrees F. Place your cauliflower roast in the oven for 20 minutes {rotating your pan after 10 minutes}.
Step 5
Remove roast from oven and cover in the sauce. Then broil on medium in the oven for 5 minutes. While the roast is finishing in the oven, toast your almonds and raisins.
Step 6
Remove the roast from oven and tranfer to a plate if desired. Drizzle addtional sauce on top and add roasted almonds and raisins. Serve with fresh cilantro and a little dish of sauce if desired.
